For maps of this size you would need Maps Made Easy, Web ODM Drone Deploy, ESRI or Pix4D. Depending on the client they have certain requirements that you have to fulfill. Lightroom or photoshop woks for stitching 10 photos, but for accurate mapping you need dedicated software that can coordinate RTK PPK or LIDAR to confirm geodata.
Web ODM is open source. Maps made easy is pay as you go and the other are licensed with subscriptions.
You can map with almost any GPS drone, RTK increases accuracy to centimeter level. So can PPK. Then Lidar enhances it even more. You can use Emlids to increase accuracy more too. It's a science that can get to surveying standards. I am not a surveyor.
